It’s that time of year when I’m craving all things fresh and green! This spinach mango smoothie is a great breakfast choice for the Spring months. It’s delicious, nutritious and incredibly refreshing.

I have to admit, in the past, I’ve had a love-hate relationship with green smoothies. The taste just wasn’t there, and at times the texture of the ground up leaves could be a little off-putting. Luckily, this green smoothie just does it for me. Once I started adding mango to the mix, it sweetened up and balanced out the flavor, while also creating a slightly thicker texture that hides the little bits of spinach specs that weren’t completely smoothed out.

EQUIPMENT

The great thing about making smoothies is that hardly any equipment is involved. All that is needed is a knife to cut the fruit (if not using frozen fruits) and a blender to blend everything together.

INGREDIENTS

This spinach smoothie is so simple to make as it only call for five ingredients. Once blended to together, the ingredients turn into a refreshing tropical flavor that you are sure to enjoy!

  • Almond Milk: Almond milk is my milk of choice. Feel free to use any type of milk you may have on hand.
  • Greek Yogurt: Greek yogurt helps make the smoothie extra creamy and adds a hint of tart. It also adds a bit of protein to the smoothie, keeping you fuller for longer. Other types of yogurt will work as well, even flavored yogurts.
  • Fresh Spinach: Packed with iron and vitamin K, fresh spinach gives the smoothie it’s beautiful green color.
  • Frozen Mango and Frozen Banana: These fruits add vitamin C and potassium to the mix, as well as serving as a natural sweetener.

SMOOTHIE MAKING TIP

Skip the ice when making smoothies and use frozen fruits instead. This helps create the perfect smoothie consistency and avoids diluting the flavor and creating a slushy texture. Frozen fruits are picked and stored during peak season, so the taste will be just as good (or maybe even better) as when using fresh fruits.

INSTRUCTIONS

  • Add the Ingredients: Add the ingredients into a blender; milk, yogurt, spinach, frozen mango, and frozen banana.
  • Blend the Smoothie: Place the lid on the blender and blend for around 30 seconds until a smooth consistency is formed. If the mixture is too thick, add additional milk and blend for a few more seconds as needed.
  • Serve and Enjoy: Pour the smoothie mixture into a glass. Serve and enjoy immediately.

SMOOTHIE SUBSTITUTIONS

One of the best things about smoothies is that swaps and substitutions can be easily implemented to make the smoothie just to your liking, or even to use up ingredients you already have on hand.

  • Make it Dairy-Free: Replace the yogurt with coconut yogurt, coconut cream, or your favorite dairy-free yogurt.
  • Make it Sweeter: I know some of you love a sweet smoothie! The fruit in the smoothie provides the sweetness, but may not be cutting it. Add a couple teaspoons of sugar or honey while blending the ingredients together.
  • Make it with Juice: Instead of adding milk, use a juice, such as orange juice, to the smoothie. This will add extra sweetness to the beverage, but will reduce the creaminess of the texture

SMOOTHIE VARIATIONS

  • Eliminate an Ingredient – Remove the mango to make a spinach banana smoothie, or vice versa. Just add another cup of frozen fruit to keep the serving portion the same.
  • Bring in a new Ingredient – Add in an additional fruit such as pineapple or blueberries to add an extra flavor to the mix.

SMOOTHIE PREP

Easily serve this tropical smoothie up for breakfast or brunch. Individual servings can be prepared ahead and then quickly blended when needed. To prep ahead of time, portion out the fruit needed for one smoothie into individual freezer bags or containers. When you are ready to make the smoothie, just add the pre-portioned ingredients to a blender with milk and yogurt.

  • 1 cup almond milk unsweetened
  • ¼ cup Greek yogurt unsweetened
  • 1 cup frozen mango cubes
  • 1 cup frozen banana slices
  • 2 cups fresh baby spinach leaves packed

Instructions

  • Add the ingredients into a blender; milk, yogurt, spinach, frozen mango, and frozen banana.
  • Place the lid on the blender and blend for around 30 seconds until a smooth consistency is formed. If the mixture is too thick, add additional milk and blend for a few more seconds as needed.
  • Pour the smoothie mixture into a glass. Serve and enjoy immediately.
