When I think of parfaits, it’s this classic fruit and yogurt parfait that comes to mind. Easily create this well-loved brunch staple with simple layers of yogurt, strawberries, blueberries and yogurt. The patriotic colors of red, white and blue are a great parfait of choice during the 4th of July Summer holiday, or for a cooling Summer breakfast during the warm months.
I can still remember the first time I had a classic fruit and yogurt parfait. It was many years ago handed to me through a McDonald’s window. I felt so fancy and healthy eating that sad parfait out of it’s little plastic cup, but also found it to be quite delicious, simple and filling. And as they say, my love-affair with parfaits started right then and there, and the rest is history.
Seriously though, I knew I could have some fun making up my own parfaits at home with all sorts of fruits, interesting layers and toppings such as a tart blueberry compote parfait a tropical mango parfait or even a strawberry shortcake parfait.
INGREDIENTS
Fruit and yogurt parfaits easily come together with only four ingredients that involves no cooking, making it an easy breakfast or brunch option that can be ready to serve within minutes.
- Fresh Blueberries & Strawberries: Grocery stores have an abundance of fresh blueberries and strawberries in the fruit’s prime season for great prices during the Summer months. Don’t use frozen berries because they could make the parfaits watery, and nobody wants that.
- Yogurt: My go-to yogurt of choice is unsweetened Greek yogurt because I like to keep my morning sugar content low and don’t mind a little tartness to balance the sweetness of the berries. If you like your parfaits on the sweeter side, a vanilla yogurt is always a great option.
- Granola: A simple granola can be easily made at home, try my easy homemade granola recipe, or you can use a pre-made granola from the grocery store or on-line. Granola adds a much-needed crunchy texture to the parfait, as well as additional sweetness.

HOW TO MAKE FRUIT AND YOGURT PARFAITS
- Once you have all of your ingredients ready, assembling the parfaits is easy. Yogurt will be used for the first layer. The yogurt can either be spooned into the glass, or pipped into the glass using an icing piping bag. If you don’t have an icing piping bag, spoon some yogurt into a plastic sandwich bag and snip one of the bottom corners to create a hole about the size of a dime for the yogurt to be squeezed through.
- Next, spoon in a layer of chopped strawberries, followed by another layer of yogurt. Then spoon in a layer of whole blueberries, add a final layer of yogurt. Top the parfait with a layer of granola. The brunch parfaits are now ready to enjoy!
HOW TO STORE PARFAITS
Parfaits hold up well when assembled and stored in the refrigerator. Make the parfaits (minus the granola layer) and cover the top of the glass with plastic wrap. The parfaits should last in the refrigerator for up to four days. I advise adding the granola right before serving to avoid the granola becoming soggy.
ARE FRUIT AND YOGURT PARFAITS HEALTHY?
The fruit and yogurt parfait is a healthy choice for any breakfast or brunch, especially when no additional sweeteners are added, keeping sugar levels to a minimum to avoid a sugar crash. Both strawberries and blueberries are loaded with vitamins, and yogurt offers a nice dose of protein. The yogurt and granola with also help keep you full throughout the morning.

Ingredients
- 1 cup fresh blueberries whole
- 1 cup fresh strawberries chopped
- 32 ounces plain yogurt
- ½ cup granola
Instructions
- Choose clear glasses that tall enough to from five parfait layers.
- Either spoon in a layer of yogurt or use pipe the yogurt into the glass using an icing bag or sandwich bag with the corner snipped. Next, spoon in a layer of chopped strawberries, followed by another layer of yogurt.
- Then spoon in a layer of whole blueberries, add a final layer of yogurt and top the parfait with a layer of granola. The brunch parfaits are now ready to enjoy!
