For the summer weekends that are calling for tropical feels, this coconut shake does just the trick. It’s an easy coconut shake recipe with only three main ingredients of ice cream, milk and coconut extract. Set out some fun toppings such as whipped cream, toasted coconut flakes and chocolate shavings, and you’ll have all you need for a refreshing, summer ice cream social!
I have to admit, I don’t recall seeing coconut shakes as on option on the local ice cream parlor’s menu board back way when. Honestly, even if it was an option, my eyes would have probably blown past it being the die-hard chocolate lover that I am. In my adult year’s, however, I’ve really come to enjoy luscious, subtle flavors such as vanilla, and of course the tropical flare coconut provides.
I recently made a batch of coconut flakes and was thinking of ways I could use up these little sweet flakes of goodness. A coconut shake came to mind, and to my surprise it was quite the delight. Lovely layer’s of creamy flavors, and refreshing. Let’s just say I’ll have this milkshake recipe on repeat all summer long.
EQUIPMENT NEEDED
Pull out your blender, ice cream scooper, measuring spoon and measuring cup, and you’re all set to make this recipe! To serve the shake, you’ll need tall glasses or milkshake glasses and straws. If you are setting out toppings, little bowls and spoons will be needed.
COCONUT SHAKE INGREDIENTS
- Ice Cream: A vanilla flavored ice cream is optimal for this recipe. Since ice cream is a main ingredient, go ahead and splurge a little on the best quality vanilla ice cream you can find. I’m talking about vanilla ice cream that was made with real vanilla and where you can actually see the little, beautiful specs of vanilla for optimal flavor.
- Coconut Exact: This extract is relatively inexpensive and can be found at your local grocery store or easily on-line. Whatever you do, don’t ship this ingredient! A little splash of coconut extract takes this shake recipe to a whole new level.
- Milk: I used coconut milk, since this is a coconut milk shake recipe after all, but feel free to use your favorite type of milk or whatever you have on hand.
- Toppings: Toppings are optional, but let’s be honest, who doesn’t love to add a few additional layers of texture and flavors to their milk shakes? Today, I went all out with whipped cream, toasted coconut flakes, chocolate shavings and maraschino cherries.

SHAKE INSTRUCTIONS
- Add the Ingredients: Add the ice cream, coconut extract and milk into a blender.
- Blend the Shake: Place the lid on the blender and blend until a smooth consistency is formed, around 15-30 seconds. If the consistency is too thick, add a bit of additional milk and blend again, repeat until your desired shake thickness is met.
- Serve and Enjoy: Pour the shake into a tall glass or milkshake glass. Add toppings as desired. Enjoy!
SHAKE SUBSTITUTIONS
Make it vegan and dairy-free: If you are also using coconut milk for this recipe, a great way to make the shake vegan and dairy-free is by replacing the ice cream with frozen bananas or a coconut based ice-cream.
