I’ve always been a big fan of cinnamon rolls, and I just love serving up an old favorite in a new way. This warm casserole is a great choice to serve around the holidays, when hosting a brunch or even celebrating a special day, like Valentine’s Day, Mother’s Day or a birthday.

It can be baked up in a snap with already prepared cinnamon rolls, making this dish low on the labor intensity level.

Serve this cinnamon roll casserole along with a savory dish, like mushroom and Gouda souffles, and mix up some grapefruit mimosas for the ultimate easy brunch that even the host can enjoy.

EQUIPMENT

Another great thing about baking a cinnamon roll casserole is that minimal equipment is needed, calling for an easy cleanup:

  • 9×13 oven-safe baking dish
  • Measuring spoons and cups
  • Mixing bowls and whisk
  • Silicon brush
  • Knife

INGREDIENTS

  • Butter: Melted butter is spread on the bottom of the casserole dish to prevent sticking.
  • Canned Cinnamon Rolls & Icing: Already prepared cinnamon rolls helps this breakfast casserole recipe come together in a snap. Pick your favorite canned cinnamon rolls that include icing. My go-to brand is Pillsbury Original Grands Cinnamon Rolls.
  • Heavy Cream or Milk: For this recipe, whole milk or heavy cream will create the richest flavor. Today I used almond milk, and it worked quite nice as well.
  • Eggs: Used to create the breakfast casserole consistency we are going for.
  • Cinnamon, Vanilla and Maple Syrup: Added in to take the classic cinnamon roll flavor to another level!
  • Almond Slices: Added to give each bite a bit of crunch.

INSTRUCTIONS

  • Preheat the oven to 375ºF. Melt the butter in the microwave and then spread along the bottom and inner sides of the casserole dish with a silicon brush.
  • Unpack the cinnamon rolls and cut each one into four equal pieces. Place the icing that was included with the cinnamon rolls to the side for later. Place the cinnamon roll pieces in the casserole dish to create a single layer.
  • In a bowl, whisk together the eggs, milk, vanilla and cinnamon until well combined. Pour the egg and milk mixture over the cinnamon roll pieces.
  • Drizzle the maple syrup over the cinnamon rolls.
  • Top off the casserole with an even layer of sliced almonds.
  • Bake the casserole for 30-35 minutes until the cinnamon rolls are golden brown (ovens may vary in time needed to bake the cinnamon roll casserole).
  • When the casserole baking time is complete, remove from the oven and allow to cool a bit.
  • Scoop the cinnamon roll icing into a small microwave safe bowl and microwave for around 10 seconds to thin out the icing. Drizzle the icing on top of the casserole and top with a few extra almond slices if desired. This brunch casserole is ready to serve!

MAKE AHEAD

To get ahead of the prep work due for the next day’s breakfast or brunch, make this recipe (minus the icing and almond slices) and let it rest in the refrigerator covered overnight. In the morning, place the casserole on the counter while the oven preheats.

VARIATIONS

STORAGE

Baking the casserole in a dish that has a lid is optimal for an easy storage option for leftovers. Otherwise, place any leftovers in an airtight container and store in the refrigerator for up to 5 days. Simply reheat in the microwave as desired.
